I recently finished reading the book "Eat to Live" by Dr. Joel Fuhrman. He inspired me and Brent to try to rid our house of most, if not all, animal products. The book was highly educational when it comes to the meaning of true nutrition. Brent and I have toyed with the idea of vegan-eating for a while, so we finally decided to give it a shot. We already had the meat-thing under control, but dairy was a challenge. Especially when it comes to the kids. But we've been doing pretty well with it for over a week now and we've been feeling great! A good side effect is that we've lost some weight too. :)
We were also inspired (again) by one of our favorite restaurants. We introduced Brent's brother and his wife (V & P) to Omar over the weekend. Omar is one of my new favorite people. If you ever want to feel good, go meet Omar! His food is AMAZING! It's completely raw and vegan. He uses fruits, vegetables, nuts, and some grains. But he doesn't cook ANYTHING. So all the food you eat is ALIVE. And it tastes WONDERFUL. He's from Lebanon and uses a lot of awesome spices and sauces. If you ever want a completely different dining-out experience, you MUST try Omar's. And one of my favorite parts of eating there is I never leaving wondering how many thousands of calories I just ate.
Our dinner on Sunday was so pretty we decided to take pictures. Brent made up this yummy salad. It makes me wish he could be home everyday to make me yummy things. (I know I can make them, but I just don't enjoy it as much as Brent does. I wish I did.) Luckily the kids all enjoyed the meal too. It's homemade black beans, quinoa, carrots, onions, bell peppers, corn, tomatoes, and celery with a bit of olive oil, balsamic vinegar, and some spices on top of a bed of romaine lettuce and cabbage with a side of avacado. YUM!

Then after dinner we headed up to a spot Brent found out about from some of his Young Men at church. It was a leisurely, short hike up to a beautiful waterfall. The trailhead is just a few miles east of us. The kids had a blast and want to do it again soon. If anybody wants to join us next time (M&S or A&P?), let us know. :)

Hey Ann, would you mind sending me that recipe??? Did Brent cook anything or did he just throw it all together? Love you guys! Can't wait to see you soon! We'd be up for a hike for sure! :)

I'd love to send you the recipe, if there was one. :) Brent just made it up. It has everything I listed there and he didn't measure the oil, vinegar or spices. We'll have to make it for you while you're here so you can see what exactly he did. I wasn't watching the whole time myself.
The only things cooked are the beans and quinoa.
And we'll definitely have to plan a hike while you're here. Preferably one a little tougher/longer than the one we just went on. ;)

Mexican is pretty easy to adjust to vegan - Middle Eastern, too.
The raw, vegan restaurant sounds awesome. I wish we had one nearby.
And I love the babywearing - especially with Darth Vadar - too funny!
